I mean, I DO have some nice books that would tell me how - like this great one I found at a yard sale from 1948:
Mother did it, my sister Tina does it..
I remember having pears and cherries when we were growing up that Mother had "put up" - we even used to help pick the cherries - yum.
I think this Farm Journal book would tell me everything I needed to know:
Another fond memory from my childhood is of when our piano teacher, Mary Domingues, would have a pot of apple butter simmering in the kitchen while we took our lesson in the next room. Wish I had some of THAT right now!
I'd probably be more interested in canning fruit than vegetables- except maybe salsa - Tina makes some GREAT salsas! She even won the prize at the county fair one year.
I don't even have any of the "equipment", and I've never even tried - but maybe I will one of these days. Apple butter cooking on a nice fall day, made with apples from my favorite local apple ranch (Cover's in Tuolumne), sounds like a wonderful idea.
After all, autumn IS only two weeks away.
And maybe I can can.
I think you can, I think you can can! I need to make a small batch (about 7 pints) of salsa. I have been lax in my canning regime this summer. The Farm Journal book is one I always have around when I am canning, but I have a bunch of different books with recipes, certain ones I like the most, and I have a LOT out of magazines and newspapers. If you are going to get started, apple butter is about the most simple. It is really good too if you bake it down in the oven, it gets a beautiful color and a nice toasted flavor to it. UMMM, maybe I will go to Boa Vista and get some apples today. We don't have enough on our trees yet to make a good batch of anything. Again, you have gotten my tummy going and I think now it expects breakfast. Love T

ReplyDeletemy gram canned and canned and canned. we do some. my gram made wonderful apple butter! was really first rate at pickling also.
we live in the house that my gram did all that in. too bad i am not talented like she was......

Canning is such a romantic notion. I think I have always been afraid of not doing it right and end up poisoning somebody. I did try a recipe for apple butter that was in an old Country Living magazine. You cooked it all day in the crock pot. Twyla
ReplyDeletei have received THE salsa recipie and will keep you all advised on how it goes. it might be a while since we have had an unusually cool spring and summer and our just now starting to get a few tomatoes.
