On a very wet, windy, rainy day not too long ago, I decided I wanted to make some soup. So I hauled this turkey carcass out of the freezer that had been in there since Thanksgiving:
I had searched everywhere for a recipe, and finally found one for "Turkey Frame Soup" ( I guess that sounded more appetizing than carcass) in an issue of Better Homes and Gardens magazine.
You see, I am not quite adept enough to concoct soup on my own.
This recipe turned out very well! I did tweak it just a bit. I added more broth , and more meat than it called for. Oh, and some salt. It needed salt. This is the first time I have ever made turkey soup in my life. Yes, you read that right.
We enjoyed it that night with a sandwich - and there was a LOT of it so I ended up freezing some.
The Thanksgiving turkey that keeps on giving.... and giving...
Wow, it looks delicious! Love the addition of those noodles and the tomatoes. You always manage to make me hungry at 6 am in the morning, and not for breakfast, either. Not that we never have had soup for breakfast, LOL. Love T

ReplyDeleteSun dried tomatoes and white beans? I have never heard of those ingredients in turkey soup. It sounds absolutely delicious. Now I'm going to have to roast a turkey just to try it. May I please borrow the recipe? Maybe I'll try it with store bought whole roasted chicken. I'm with Tina...hungry for turkey soup for breakfast!

ReplyDeletejohn makes soup constantly. the miniute the meal is over the bones go in a pot. once in a great while all he does is cool it-skim the fat and then freeze the broth for later. i am soooo lucky i married a man that cooks (many thanks to my mother in law [rip]). lots of other options to - clean out your veggie drawers in fridge - kale is good also.
