I let my bananas get WAY too ripe (kept forgetting to put them in my lunch box when I went to work!), and I was determined not to waste them. so I went searching for a banana bread recipe that was Weight Watchers friendly, and found one:
I tried a little slice with some light cream cheese. And I figured it would make a nice treat on Easter morning too!
I baked the batter in two mini loaf tins instead of one regular-sized loaf pan for about 35-40 minutes , so I figure that's 2&1/2 Points Plus Values for one tenth of a mini-loaf.
And yes, it's good!

ReplyDeletesomething i do with over ripe bananas is peel and then freeze them. i put them in the food processor with just a little bit of milk and end up with a (form of) banana ice cream. your banana bread looks great.
ReplyDeleteMmmmm, I know I'm a little late, but yummm! I am always looking for a new Banana Bread recipe - and I happen to have 3 RIPE bananas sitting in the kitchen ready for this recipe!
