Summer Dinner

Lori already had plans for dinner with friends one night when I was visiting at her house last week, so this is what I made myself for dinner:

Dinner for one:
farmer's market zucchini, steamed
+ one large farmer's market tomato, peeled and chopped
+ reduced fat sharp cheddar cheese
= YUM
Mother used to fix a similar version with onions, and we loved it when we were kids. Of course, back then the vegetables were probably from Daddy's garden (so they would have been even better!).
And I still love it.
I steamed the squash and then added the tomato and cheese, and microwaved it just long enough to melt the cheese and warm the tomato. Simple, delicious and healthy.

Thats a nice healthy dinner! I also had farmer's market zucchini lately, but pan fried it with garlic and butter. Although it tasted really good - not particularly as healthy as steaming it!

looks great - i am on a new med that i have to be a low tyramine diet - tyramine is something that occurs naturally is food as it ages - so only super fresh for me now. no cheese, no condiments, salad dressings (they have vinegar) and no soy. so except for the cheese, that looks exactly like something i could have without risking my health.

Yes, still one of my favorite go-to easy dishes from the garden. I do like it with a bit of onion, but it doesn't need them. I like the idea of adding some garlic, I think I will try that next time. Love T
