I let my bananas get WAY too ripe (kept forgetting to put them in my lunch box when I went to work!), and I was determined not to waste them. so I went searching for a banana bread recipe that was Weight Watchers friendly, and found one:
I tried a little slice with some light cream cheese. And I figured it would make a nice treat on Easter morning too!
I baked the batter in two mini loaf tins instead of one regular-sized loaf pan for about 35-40 minutes , so I figure that's 2&1/2 Points Plus Values for one tenth of a mini-loaf.
And yes, it's good!

Frustration. Enjoying a tasty cup of coffee, I had no idea I was missing banana-oatmeal bread. Sigh! Looks scrumptious.
something i do with over ripe bananas is peel and then freeze them. i put them in the food processor with just a little bit of milk and end up with a (form of) banana ice cream. your banana bread looks great.
Mmmmm, I know I'm a little late, but yummm! I am always looking for a new Banana Bread recipe - and I happen to have 3 RIPE bananas sitting in the kitchen ready for this recipe! I don't even have to go out and buy any of the ingredients...got em all! Yay! Gonna make this tonight or tomorrow morning for sure!! I'm doing WW right now too, so this is perfect!!
